Brazilian Vegetable (Vegan) Feijoada- Black Bean Stew Recipe is so hearty! Feijoada is considered the national dish of Brazil. It is a delicious black bean stew that consists of meat like salty pork ribs, sausage (blood sausage or regular beef sausage), and smoked pork. This nutritious recipe was created from scraps of meat such as pig ears, feet, & tails... during the time that the African slaves worked on the Brazilian sugar plantations. Substituted for meat, I used vegetables. Best served with rice and farofa. Every bite of history through this iconic stew made vegan.

Ingredients:
1/2 Tomato
1/2 Zucchini
2 Red Potatoes
4 Garlic Cloves
1/2 Yellow Onion
1 Carrot
1 Yellow Squash
1/2 Green Pepper
1 Lime
1 Cup Orange Juice
2 Cans Black Beans *Make 1 Can Overnight
4 Bay Leaves
3 Tsp Corn Starch
Vegetable Oil
1/2 Cup Water Per Beans
Seasoning
2 Tsp Paprika
2 Tsp Turmeric
1 Tsp Cumin
2 Tsp Garlic Powder
Sprinkle Salt
